About Spelt
Spelt is in fact a distant cousin of the modern wheat we
have today.
Originally abandoned for more modern varieties because of
its tough husk, which made it more difficult to process
than modern wheat varieties. It is now understood that the
husk protects the kernel from pests & pollutants. With
the husk removed just before milling, the kernel is protected
& nutrients are retained.
Modern wheat on the other hand has been altered considerably
over time to assist easy growing/harvesting, increase gluten
content & maximise yield etc
Among its many benefits Spelt is also higher in protein
than wheat, is naturally high in fibre & a delicious
alternative for many with wheat intolerances.
